Fresh basil can quietly change a familiar pasta into something much more alive.
After quite a while, we had pasta again.
And fresh basil made all the difference.
This is such a small thing to say, but the change was immediate. The pasta was already fine. Warm, familiar, comforting, exactly the kind of food that does not need too much explanation.
Then the basil went in.
Suddenly it tasted fresher, sharper, more alive. Not restaurant-level dramatic. Just better in a way that was very obvious after the first bite.
I had forgotten how much fresh basil does.
Maybe that is also why I had been missing pesto. Pesto has that same green, fragrant, slightly indulgent thing going on. It makes pasta feel complete without needing too much else.
There is a funny gap between effort and effect here.
Adding basil is almost no work. Wash leaves, tear or chop, add at the end. But the dish changes more than it has any right to.
Some ingredients are like that.
They don’t behave like supporting cast. They enter late and behave as if the whole plate was waiting for them.
Oh basil.
